One of the best things you'll ever put into your mouth...

Makes 2 hefty sammiches
Ingredients
4 slices hearty bread of your choice 8 ounces baby bella mushrooms, sliced thin
8 ounces of brie
2 large onions, sliced
4 tablespoons butter
2 tablespoons olive oil
pinch of cayenne pepper
pinch of baking soda
salt & pepper to taste

Instructions:

Caramelize Onions
In a dutch oven over medium heat, add 1 tablespoon of butter and 1 tablespoon of olive oil to the pot, add onions, 1/2 teaspoon of salt, a pinch of cayenne, and a pinch of baking soda. Cook stirring occasionally until the onions, look soupy, once they start turning golden, reduce heat to medium-low and cook, stirring constantly for about 45 minutes until they are deep orange, thick, and jammy (your patience will be rewarded). Remove from pot and set aside.

Browned Mushrooms
In the same pot you caramelized the onions in, add a tablespoon of butter and a tablespoon of olive oil, add sliced mushrooms and cook over medium-high heat with the lid on for 7 minutes until they release liquid. Cook, stirring often until mushrooms are squeaky, and well browned, about 15 minutes. Season with salt and pepper to taste.

Assemble Sammich
Divide the caramelized onions, browned 'shrooms, and brie between the two sandwiches.

Melt the remaining 2 tablespoons of butter in a cast-iron skillet over low heat. Brush the exterior of the bread with the melted butter. Toast sandwich on each side over low heat until golden. Let cool briefly on a wire rack for crispness. Enjoy!
